The Humboldt is The James Brand’s take on a true do-it-all fillet knife, built with input from TJB ambassador Conner Coffin along with chefs and water-focused users who rely on this kind of tool regularly. It’s made to handle the full job, from working around rib bones to dealing with tough skin and scales, with a shape and flex that feel considered rather than generic. This is the kind of knife that makes sense whether you’re cleaning fish at the beach, on the dock, or back in the kitchen.

A stonewashed, full-tang Böhler N690 stainless-steel blade gives the Humboldt the corrosion resistance needed for wet environments, while machined G10 handles keep the grip secure with bare hands, gloves, or slick conditions. The trailing point, proprietary flex pattern, aggressive jimping, and sharp edge out of the box all work together to give you control without making the knife feel overly specialized. Paired with a full-length Kydex sheath, it’s ready to travel wherever the day takes you.
